- 3 lbs white or yellow onions sliced thin
- 3 tbsp olive oil or avocado oil
- 1 tsp kosher salt
- 2 cups beef stock or dark vegetable stock
- 1 cup quinoa well rinsed
Preheat the oven to 400F/200C
Peel and slice one bag of onions thinly and to a uniform thickness. A mandoline slicer is the best way to prep a whole bag of onions quickly and get equally thick slices.
Toss the sliced onions in the olive oil and salt, then spread the onion slices evenly on a parchment lined baking sheet.
Bake the onions on the middle rack for a total of one hour, taking them out every 15 minutes to stir well and spread the onions out evenly again.
Let the onions cool, chop them into more manageable pieces if desired, and reserve half in the refrigerator for another recipe in a sealed container.
While the onions are cooling, rinse the quinoa in cold water a couple of times to remove any dirt and the natural bitterness.
Add the rinsed quinoa to your rice cooker along with two cups of stock.
Add half of the carmelized onions to the rice cooker, stir well, and cook with the quinoa setting or appropriate manual timing for your machine.
When the rice cooker finishes, fluff the quinoa with a fork and season with salt to taste. Fresh thyme or cracked black pepper make great finishing touches.
