- 1 tbsp olive oil
- 1 whole onion diced
- 2 whole carrots diced
- 2 stalks celery diced
- 3 cloves garlic minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1½ cups brown or green lentils cleaned and rinsed
- 1 14.5oz canned tomatoes
- 6 cups chicken stock or vegetable
- 2 whole bay leaves
- ¾ tsp salt
- ½ tsp black pepper
- 1½ tbsp vinegar or lemon juice for acidity
- 1 tsp chopped herbs to serve
Heat the olive oil in a large pot over medium. Add the onion, carrot, and celery. Cover and cook 6 to 8 minutes, until softened.
Stir in the garlic, cumin, and paprika. Cook 30 seconds, until fragrant.
Add the lentils, diced tomatoes, stock, bay leaves, salt, and pepper.
Bring to a boil, then reduce to a gentle simmer.
Cover and cook 30 to 35 minutes, until the lentils are tender.
Remove the bay leaves. Stir in the vinegar off the heat.
Taste and adjust the salt. Serve with chopped herbs.
