Nobody’s pictured fajitas as a low carb or keto dinner before. My recipe and tortilla pairing changes that.

Most fajita marinades hide sugar behind two or three ingredient names, the same problem I’ve written about before. Sodium runs high too, and preservatives hold the color through a year on a shelf before it ever touches your chicken. A GLP-1 diet demands the same scrutiny on the seasoning as on the carb count, which means going off the shelf and building the blend yourself.

The label reads 14g total carbs and 13g dietary fiber. Subtract the fiber, and one more gram from allulose, a rare sugar the body doesn’t process the same way as table sugar, and you land at 0g net carbs per serving. That’s the whole math behind the “zero” claim, and it holds up.

It’s made with resistant wheat starch, resistant potato starch, and extra virgin olive oil, no seed oils. Two preservatives keep it shelf stable, calcium propionate and sorbic acid, along with a small list of dough conditioners and gums that give it the texture of a real flour tortilla instead of a cardboard stand-in.

The seasoning. This is the same job a bottled marinade does, minus the sugar and preservatives. Five spices you likely already have. As always, season with your heart and with whatever pleases your ancestors. Try some Maggi or soy sauce for color and umami, or add a little monkfruit sweetener or allulose if your prefer the slightly sweet version.

  1. Slice the chicken into strips. Thinner strips cook faster and pick up more marinade surface area.
  2. Combine the marinade ingredients in a bowl. Add the chicken, toss to coat, and let it sit 15 minutes on the counter. Skip the fridge for this step, cold chicken cooks unevenly in the air fryer.
  3. Toss the peppers and onion with oil and salt in a separate bowl. Keeping them apart from the chicken at this stage means you can pull the vegetables early if your air fryer runs hot.
  4. Load the chicken into the air fryer basket in a single layer. Cook at 400°F for 8 minutes.
  5. Add the peppers and onion to the basket. Shake to combine with the chicken, then cook another 8 to 10 minutes, shaking once halfway, until the chicken hits 165°F internal and the vegetables have char on the edges.
  6. Rest for 5 minutes before serving. The chicken keeps cooking slightly off heat, and the juices redistribute instead of running out onto the plate.

Variations

  • Extra heat. Add a diced jalapeño to the vegetable mix, or a pinch of cayenne to the marinade.
  • Fajita bowl. Skip the tortilla, serve over cauliflower rice or a bed of shredded lettuce with the same toppings.
  • Greek yogurt crema. Swap the sour cream for plain Greek yogurt thinned with a splash of lime juice. Same tang, extra protein per serving.

Can You Eat Fajitas on a GLP-1 Diet?

  1. Yes, and this version is built for it. Chicken breast digests easily and delivers protein without the density that causes discomfort on a reduced appetite.
